Baked Bangus with Calamansi Marinade
Ingredients
  • 2 pounds whole milkfish (bangus), or more to taste
  • 1 tomato, diced
  • 1 onion, chopped
  • 1 (2 inch) piece ginger, thinly sliced crosswise, or to taste, divided
  • salt and ground black pepper to taste
  • 4 calamansi, juiced
  • 1/2 cup soy sauce
  • 2 cloves garlic, chopped

Preheat your oven to the desired temperature of 350 degrees F (175 degrees C). Cover a roasting pan with an adequate amount of aluminum foil to completely cover the bangus.

Carefully remove the scales and gills from the bangus, then wash out the innards. Pat the fish dry with a paper towel to remove excess moisture.

Mix together tomato, onion, and one-third of the ginger in a bowl. Add salt and pepper to taste. Make a horizontal incision on the front side of the fish, then fill it with the tomato mixture. Place the fish in the prepared roasting pan.

Mix calamansi juice, soy sauce, garlic, and the remaining ginger in a separate bowl. Pour this mixture over the fish in the pan. Fold the aluminum foil over the fish, ensuring all edges are sealed tightly.

Bake the fish in the preheated oven for approximately 60 minutes, or until it flakes easily with a fork.
