Bahamian Conch Bites
Ingredients
  • 1 quart oil for frying
  • 3/4 cup all-purpose flour
  • 1/2 cup milk
  • 1 egg
  • ground cayenne pepper to taste
  • seasoned salt to taste
  • salt and pepper to taste
  • 1 cup chopped conch meat
  • 2 stalks celery, chopped
  • 1/2 onion, chopped
  • 1/2 green bell pepper, chopped
  • 2 cloves garlic, chopped
  • 2 tablespoons ketchup
  • 2 tablespoons lime juice
  • 1 tablespoon mayonnaise
  • 1 tablespoon hot sauce
  • salt and pepper to taste
Instructions
1
Preheat your deep fryer or large saucepan to a scorching 375 degrees F (190 degrees C).
2
Combine dry ingredients: In a large mixing container, whisk together flour, milk, and egg until you achieve a uniform consistency. Add a pinch of heat with cayenne pepper, along with seasoned salt, salt, and pepper to taste. Incorporate conch meat, chopped celery, sautéed onion, diced bell pepper, and minced garlic into the mixture.
3
Fry the fritters: Using a spoon or ladle, drop rounded tablespoons of the batter into the hot oil in batches. Cook until golden brown on all sides, taking approximately 5 minutes to achieve the desired color.
4
Drain excess oil: Remove the fritters from the hot oil and place them on paper towels to drain any remaining excess oil.
5
Prepare the dipping sauce: In a small mixing bowl, combine ketchup, freshly squeezed lime juice, mayonnaise, hot sauce, salt, and pepper. Serve the dipping sauce alongside your fritters for a delicious accompaniment.
