Ingredients
- 24 chicken wings, separated
- 3 tablespoons lime juice
- 1 teaspoon seasoned salt
- 1 teaspoon vegetable oil
- 1 large onion, diced
- 1/2 green pepper, diced
- 6 large potatoes, peeled and diced
- 3 carrots, diced
- 1/2 teaspoon crushed red pepper flakes
- 1 tablespoon ground allspice
- 2 bay leaves
- 3/4 cup lime juice
- 3 cups water
- salt and black pepper to taste

Combine the chicken wings, 3 tablespoons of freshly squeezed lime juice, and seasoned salt in a bowl. Allow the mixture to sit at room temperature for 1 hour, allowing the flavors to meld together.

In a large saucepan, heat about 3-4 tablespoons of vegetable oil over medium heat. Add the sliced onion and diced green pepper, stirring occasionally as they cook until the onion becomes translucent and starts to develop a golden brown color, approximately 10 minutes. Add the peeled potatoes, carrots, red pepper flakes, ground allspice, bay leaves, marinated chicken wings, lime juice, and water to the saucepan. Bring the mixture to a gentle simmer, then reduce the heat to medium-low and cover the saucepan. Continue cooking the mixture until the chicken is no longer pink at the bone and the vegetables are tender, taking around 40 minutes.
