- 1/3 cup brown sugar
- 3 tablespoons minced fresh ginger root
- 18 slices bacon, halved crosswise
- 12 large sea scallops, cut into thirds
- 36 toothpicks

Position the oven rack approximately 6 inches away from the heat source and set the broiler to its highest temperature. Cover two baking sheets with a layer of aluminum foil.

Combine teriyaki sauce, brown sugar, and ginger in a bowl using a whisk to mix them thoroughly.

Wrap each individual scallop with one half of a bacon strip, securing it in place with a toothpick. Submerge the bacon-wrapped scallops into the teriyaki mixture, then arrange them on one of the prepared baking sheets.

Place the scallops under the broiler for a short period, or until they are lightly caramelized on the outside, approximately 6 minutes. Flip the scallops over and transfer them to a clean baking sheet; return the scallops to the oven for an additional 6 minutes, or until the bacon is nicely browned on its second side.
