Bacon Wrapped Basil Chicken

  • 4 (6 ounce) boneless, skinless chicken breasts
  • 1/2 (12 ounce) bottle garlic and herb marinade
  • 16 fresh basil leaves
  • 1 large tomato, thinly sliced
  • 4 slices provolone cheese
  • 12 slices bacon
  • 1/4 cup freshly grated Parmesan

Prepare the chicken breasts by laying them flat on a stable surface. Make a horizontal incision through the middle of each breast, taking care not to cut all the way through. Open up the two halves and flatten them out like a book. Place the chicken breasts and marinade in a large, airtight container made of plastic. Remove any air from the bag and seal it tightly, then place it in the refrigerator to marinate for 30 minutes.

Next, preheat your oven to a very high temperature of 500 degrees F (260 degrees C).

Place the opened chicken breasts on a flat, heat-conductive surface. Arrange 4 basil leaves on one half of each breast, followed by 2 to 3 tomato slices and 1 cheese slice on top. Fold the chicken together to enclose its filling, securing it with toothpicks if necessary. Wrap 3 slices of bacon around each chicken breast to add extra flavor.

Put the prepared chicken breasts in the preheated oven and cook for 15 minutes. Flip them over and continue cooking for an additional 15 minutes. Remove the chicken from the oven, sprinkle it with Parmesan cheese, and continue cooking until the cheese is melted and bubbly, taking about 2 to 3 minutes.
