- 1/3 cup diced onion
- 2 large potatoes, peeled and chopped
- 1 tablespoon butter
- 4 corn or flour tortilla

Heat a skillet over medium-high heat, adding the bacon inside. Allow it to cook until it's uniformly browned on all sides. Utilize a slotted spoon to carefully remove the cooked bacon from the skillet, and then drain it on paper towels. Reserve the remaining bacon drippings in the skillet for later use.

In a separate bowl, whisk together eggs, milk, water, salt, and pepper until they're fully incorporated.

Add diced potatoes to the skillet with the reserved bacon drippings and cook over medium heat until they're slightly tender. Introduce chopped onions into the skillet, stirring them in for about 1 minute.
