Bacon, Mushroom, and Swiss Cheese Meatloaf
Ingredients
  • 12 ounces chopped raw bacon
  • 1 small white onion, chopped
  • 5 button mushrooms, chopped
  • 1 1/2 pounds extra-lean ground beef
  • 1 egg
  • 1/4 cup evaporated milk
  • 6 ounces shredded Swiss cheese, divided
  • 1/2 cup corn flake crumbs
Instructions
1
Preheat your oven to a medium-high temperature, specifically 350 degrees Fahrenheit or 175 degrees Celsius.
2
In a large skillet, cook 12 ounces of bacon over medium heat, stirring occasionally until it reaches a golden brown color. Transfer the cooked bacon to a plate lined with paper towels using a slotted spoon, reserving 1 tablespoon of the bacon for later use. Discard all but this reserved amount of bacon grease, then add sliced onions and mushrooms to the skillet. Continue cooking until they become soft.
3
In a separate bowl, combine ground beef, an egg, and milk. Mix well to incorporate the cooked onions and mushrooms. Add 4 ounces of Swiss cheese, leaving about 1 ounce for later use, along with the reserved bacon. Stir until everything is fully combined. Finally, add cornflake crumbs and mix until they blend in seamlessly.
4
Shape the mixture into a loaf shape, then place it in a meatloaf pan.
5
Bake this delicious creation in the preheated oven for 1 hour, or until it's cooked through. Remove from heat and let the excess fat drain off.
6
Sprinkle the remaining 2 ounces of Swiss cheese and reserved bacon on top, then return it to the oven for an additional 5 minutes, or until the cheese is melted and bubbly.
