Bacon-Infused Roasted Chicken
Ingredients
  • 2 tablespoons butter
  • 1 (4 pound) whole chicken
  • salt and pepper to taste
  • 1 teaspoon dried thyme
  • 2 carrots, cut in chunks
  • paprika to taste
  • 8 slices bacon
  • 2 cups beef broth
Instructions
1
Firstly, preheat your oven to 450 degrees Fahrenheit (220 degrees Celsius).
2
Next, generously apply butter all over the chicken. Then, sprinkle salt, pepper, and thyme liberally over it.
3
Place the carrots inside the chicken's body cavity, and fasten the chicken's legs together with a knot. Position the chicken breast side up in a roasting pan, making sure it's centered and stable.
4
Lay strips of crispy bacon across the top of the chicken, securing them with toothpicks to prevent them from falling off during cooking. Sprinkle a pinch of paprika over the chicken for added flavor.
5
Carefully pour the beef broth into the roasting pan, but avoid pouring it directly over the bacon strips.
6
Roast the chicken in the preheated oven for 15 minutes, then reduce the heat to 350 degrees Fahrenheit (175 degrees Celsius). Use some of the broth to baste the chicken, ensuring it stays moist and flavorful.
7
Continue roasting the chicken for 1 hour and 15 minutes, or until it reaches an internal temperature of 180 degrees Fahrenheit (82 degrees Celsius) when checked in the thickest part of the thigh. Baste the chicken every 15 minutes with some of the broth to keep it tender.
8
Once the chicken is cooked, remove the bacon strips and discard the toothpicks. Roast the chicken for an additional 15 minutes to achieve a golden-brown skin.
9
Transfer the roasted chicken to a serving platter, and carefully remove the ties that fastened its legs together. You can enjoy the crispy bacon, but it's recommended to discard the carrots that were placed inside the chicken.
