Bacon, Cheddar, and Spinach Breakfast Strata
Ingredients
  • 1 tablespoon bacon grease
  • 1 (1 pound) loaf day-old bread, cubed
  • 12 large eggs
  • 2 teaspoons kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 pinch cayenne pepper
  • 1 pinch freshly grated nutmeg
  • 2 1/2 cups heavy cream
  • 1 pound sliced bacon, cut crosswise into 1/2-inch strips
  • 1 pound fresh spinach, wilted, squeezed dry
  • 12 ounces shredded extra-sharp Cheddar cheese, divided

Preheat your oven by setting the temperature to 350 degrees F (175 degrees C).

Next, heat a generous amount of oil in the bottom and sides of a 9x13-inch baking dish, using roughly one tablespoon of bacon fat for this purpose.

Subsequently, place the bread cubes in a spacious mixing bowl and proceed to crack eggs into another separate mixing bowl.

Season the egg mixture with a pinch of salt, a few grinds of pepper, a dash of cayenne, and a sprinkle of nutmeg.

Add the cream to this egg mixture and whisk it thoroughly until well combined.

Pour the egg/cream mixture over the bread cubes in the mixing bowl and mix to distribute the ingredients evenly throughout.

Allow the bread mixture to rest for approximately 15 minutes, allowing it to absorb the liquid ingredients.

Transfer half of the bread mixture to the prepared baking pan and spread it evenly over the bottom, pressing it down slightly to secure it in place.

Top this bread mixture with half of the grated Cheddar cheese and add a layer of cooked bacon pieces, spread evenly over the top.

Add a layer of cooked spinach on top of the bacon; finish with half of the remaining cheese.

Finish by adding the rest of the soaked bread cubes, spreading them evenly over the top and pressing them down slightly to secure them in place.

Sprinkle the rest of the grated cheese over the top of the strata, covering it completely.

Cover the baking dish with a lid and let the strata sit at room temperature for 1 hour, allowing it to come to room temperature.

Bake the strata in a preheated oven until it is set, taking approximately 45 minutes to achieve this.

Alternatively, you can broil the strata for a minute or two to brown the top of the dish.
