Ingredients
- 1 pound spaghetti
- 2 tablespoons olive oil, divided, or as needed
- 8 slices bacon, diced
- 1 onion, chopped
- 1 clove garlic, minced
- 1/4 cup dry white wine
- 4 large eggs, beaten
- 1/2 cup grated Parmesan cheese
- salt and black pepper to taste
- 2 tablespoons chopped fresh parsley
- 2 tablespoons grated Parmesan cheese
Instructions
1
Begin by filling a large container with water, adding a moderate amount of salt to the mixture. Place the pot on high heat and bring the water to a rolling boil.
2
Next, submerge spaghetti into the boiling water, gently stirring it occasionally to prevent tangles. Continue cooking until the pasta reaches your desired level of doneness, typically around 12 minutes. Remove it from the water with a slotted spoon and transfer it to a separate surface.
3
In a separate cooking vessel, heat a small amount of olive oil over medium heat. Introduce diced bacon into the pan and stir constantly until it is evenly browned, taking around 10 minutes to achieve this. Remove the cooked bacon from the pan with a paper towel, reserving 2 tablespoons of its rendered fat for later use.
4
Add another tablespoon of olive oil to the reserved bacon fat, then introduce chopped onion into the pan. Cook over medium heat until the onion becomes translucent and its natural sweetness is released, approximately 5 minutes. Introduce minced garlic into the pan and cook for an additional minute to allow its flavor to unfold.
5
Add a small amount of wine into the pan, stirring it in and allowing its liquid to evaporate for about 1 minute. Return the cooked bacon into the pan, then add the cooked spaghetti. Combine the two ingredients by tossing them together until they are evenly coated.
6
If necessary, add a small amount of olive oil to the pan to prevent the spaghetti and bacon from sticking together. Introduce beaten eggs into the pan, stirring constantly with a large fork or tongs until they are almost set.
7
Quickly add 1/2 cup of grated Parmesan cheese to the pan, stirring it in and allowing its flavors to combine with those of the spaghetti and bacon. Season with salt and pepper, taking care not to overdo it as both ingredients are already quite salty.
8
Serve the spaghetti and bacon warm, sprinkling chopped parsley on top for added flavor and texture. Offer extra Parmesan cheese at the table, allowing each person to customize their serving to taste.
