Bacon Avocado Breakfast Burritos
Ingredients
  • 1 tablespoon butter, divided
  • 1 cup diced red potatoes
  • 1 1/2 cups chopped onion
  • 6 eggs, beaten
  • salt and ground black pepper to taste
  • 8 (7 inch) whole wheat tortillas
  • 1 pound cooked and crumbled turkey bacon
  • 1 1/2 cups shredded low-fat Cheddar cheese
  • 1 large avocado, thinly sliced
  • 1/2 cup salsa, or as needed
  • 1/2 cup reduced-fat sour cream, or as needed

Heat butter in a pan over medium heat and let it melt, 1.5 teaspoons of it. Cook diced potatoes in the melted butter until they're soft and tender, about 10-15 minutes. Transfer them to a separate container.

In the same pan, heat the remaining butter over medium-high heat and sauté sliced onions until they're soft and translucent, about 5-10 minutes. Transfer them to another container.

In a separate bowl, whisk together eggs, salt, and pepper until well combined. Lower the heat under the pan to medium and cook scrambled eggs in the hot pan until they're set, about 3-5 minutes; transfer them to a plate.

Lay out tortillas on a flat surface. Spoon the cooked potatoes, sautéed onions, scrambled eggs, crispy bacon, shredded Cheddar cheese, diced avocado, salsa, and sour cream in a straight line across the middle of a tortilla. Fold the opposing edges over the filling to overlap it, then roll one of those edges around the filling into a burrito.
