Bacon and Potato Frittata with Swiss Chard
Ingredients
  • 6 slices bacon, chopped
  • 1 potato, peeled and sliced into thin 1-inch pieces
  • 2 tablespoons water, or as needed
  • 1 clove garlic, thinly sliced
  • 1/2 teaspoon red pepper flakes
  • salt and ground black pepper to taste
  • 1 bunch Swiss chard, chopped
  • 8 eggs, beaten
  • 1/3 cup grated Parmesan cheese

Position the oven rack approximately six inches away from the heat source and set the broiler to its highest temperature setting.

Prepare the oven by preheating it to a high temperature before placing the skillet inside.

Cook and stir the bacon in a large oven-safe pan over medium heat until it reaches an even, golden brown color and becomes crispy, taking around 10 minutes to accomplish this. Remove all but one teaspoon of the rendered bacon fat from the pan.

Combine the sliced potatoes, water, minced garlic, red pepper flakes, salt, and black pepper in the pan with the bacon; cover the pan with a lid and cook until the potatoes are tender, which should take around 10 minutes.

Add the Swiss chard to the potato mixture and cook, stirring occasionally, until the chard is slightly wilted, taking two to three minutes.

Pour the eggs over the potato-chard mixture and stir gently before removing the pan from the heat source. Top the egg mixture with a generous amount of Parmesan cheese.

Place the skillet under the preheated broiler and cook until the eggs are set and the frittata is golden brown around the edges, taking three to four minutes.
