Bacon and Chicken Stir-Fried Rice
Ingredients
  • 3 cups water
  • 3 cups instant white rice (such as MinuteĀ®)
  • 2 teaspoons vegetable oil
  • 3 skinless, boneless chicken breasts, cut into chunks
  • 12 slices bacon
  • 1 cup chopped green onion
  • 1/2 cup soy sauce, or to taste
Instructions
1
Boil water in a saucepan until it reaches its boiling point. Introduce instant white rice into the boiling water, ensuring a thorough mixture. Allow the rice to soften and cook for approximately 5 minutes.
2
Heat oil in a separate cooking vessel over medium heat. Cook chicken within the hot oil until it reaches a fully cooked state and no longer displays pinkish hues in its center, taking around 5 to 7 minutes.
3
Prepare bacon by cooking it in a large cooking vessel or skillet over medium-high heat until it reaches its desired level of doneness, yet remains tender and not overly crunchy. Remove the cooked bacon to a plate lined with paper towels for easy disposal of excess fat. Reserve 1 to 2 tablespoons of the bacon's drippings in the bottom of the cooking vessel. Cut the cooked bacon into smaller pieces.
4
Reheat the reserved bacon drippings in the cooking vessel over medium-high heat. Combine cooked rice, chicken, small pieces of bacon, green onions, and soy sauce in the wok; stir constantly until all components are evenly distributed and hot, taking around 2 to 3 minutes.
