Ingredients
- 12 ounces dried salted cod fish
- vegetable oil for frying
- 4 large potatoes, peeled and cut into very small cubes
- 1/2 cup olive oil
- 1 large onion, sliced thin
- 3 cloves garlic, minced
- 1 tablespoon butter
- 1 tablespoon all-purpose flour
- 1 cup hot milk
- 1 pinch ground nutmeg
- 1 1/3 cups heavy cream
- salt and ground black pepper to taste
- 2/3 cup heavy cream
- 1 ounce grated Parmesan cheese

Submerge the dried salted cod in a container filled with chilled water, positioning it so that the skin side faces upwards. Repeat this process four times over a 24-hour period, discarding the water each time.

Preheat your oven to a temperature of 350 degrees Fahrenheit (175 degrees Celsius).

Place the cod in a large saucepan filled with enough water to cover it; bring the mixture to a boil and cook for 10 minutes. Remove the cod from the pan, discarding the skin and bones in the process. Cut the cooked cod into bite-sized pieces and set them aside.

Heat a substantial amount of vegetable oil in a large skillet over medium-high heat. Divide the potatoes into manageable portions and fry them in the hot oil until they are just cooked, approximately 5 minutes. Transfer the potatoes to a plate lined with paper towels to remove excess moisture.

Pour the olive oil into a Dutch oven or heat-proof casserole dish over medium heat. Cook the onion and garlic in the oil until the onion becomes translucent, roughly 5 minutes. Add the cooked cod to the pan and cook for an additional 3 minutes; stir in the potatoes and continue cooking for another minute or two.

Melt butter in a separate saucepan over medium-low heat; vigorously stir the flour into the melted butter. Gradually pour in the hot milk while stirring continuously; cook and stir until the mixture thickens. Season with nutmeg.

Pour the cooked mixture from step 6 into the casserole dish; stir to coat. Allow the mixture to simmer together for approximately 2 minutes. Season with salt and pepper.

Drizzle the remaining 2/3 cup of cream over the mixture; sprinkle with Parmesan cheese.

Place the casserole dish in the preheated oven and bake until the top is golden brown, taking approximately 30 to 40 minutes. Serve hot.
