Avocado Corn Salsa
Ingredients
  • 3 ears fresh corn, husks and silks removed
  • 2 avocados - peeled, pitted, and cubed
  • 1 red onion, finely diced
  • 1 red bell pepper, seeded and diced
  • 1/3 cup red wine vinegar
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup fresh lime juice
  • 2 tablespoons olive oil
  • 1 tablespoon minced garlic
  • 1 tablespoon ground cumin
  • 1 teaspoon crushed red pepper flakes
  • salt and black pepper to taste

Fill a large container with water that is sufficient to submerge the corn, and place it on high heat until boiling. Continue cooking for approximately 5 minutes or until the corn's kernels are tender but still retain some crunch. Remove from heat and transfer to an ice bath to chill. Next, use a sharp blade to separate the kernels from their cob shells.

Take the separated corn kernels and place them in a medium-sized container. Combine the avocado, red onion, bell pepper, vinegar, cilantro, lime juice, olive oil, garlic, cumin, and crushed red pepper flakes in the same container. Mix all the ingredients together until well combined. Add a pinch of salt and pepper to taste.
