Autumn Vegetable Cheese Casserole
Ingredients
  • 3 cups milk
  • 3 carrots, peeled and diced
  • 2 sweet potatoes, peeled and diced
  • 2 leeks, finely chopped (white part only)
  • 2 parsnips, peeled and diced
  • 2 stalks celery, diced
  • 1 butternut squash, peeled and diced
  • 1 small turnip, peeled and diced
  • 1 (8 ounce) package cream cheese, cubed
  • 1 cup shredded Parmesan cheese
  • 1 pinch ground nutmeg
  • salt and ground black pepper to taste
  • 1 cup fine bread crumbs
  • 2 tablespoons melted butter, or as needed
Instructions
1
Preheat your oven to a high temperature of 350 degrees Fahrenheit (175 degrees Celsius).
2
Next, take a moment to prepare your baking vessel by coating it with a thin layer of grease.
3
To begin cooking the dish, combine milk, carrots, sweet potatoes, leeks, parsnips, celery, butternut squash, and turnip in a large saucepan.
4
Once the ingredients are mixed together, bring the mixture to a rolling boil on your stovetop.
5
Reduce the heat to a lower setting and let the vegetables simmer gently for approximately 15 minutes, stirring occasionally.
6
At this point, stir cream cheese into the vegetable mixture until it has fully melted and blended in.
7
Add Parmesan cheese and a pinch of nutmeg to the mixture, stirring until well combined.
8
Season the vegetable mixture with a pinch of salt and pepper to taste.
9
Pour the seasoned vegetable mixture into your prepared casserole dish.
10
Meanwhile, in a small bowl, combine bread crumbs and melted butter until they form a smooth, crumbly mixture.
11
Sprinkle the bread crumb mixture evenly over the top of your casserole dish.
12
Bake the casserole, covered with a lid, in your preheated oven until it is bubbly and hot, approximately 30 minutes.
13
Remove the lid and continue baking for an additional 5 minutes, or until the top is lightly browned.
14
Finally, allow the casserole to rest for 2 minutes before serving.
