Ingredients
- 1 large Pink Lady apple - peeled, cored and diced
- 1 large Bartlett pear - peeled, cored and diced
- 1/4 cup brown sugar
- 1 tablespoon vanilla extract
- 2 teaspoons cornstarch
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- 1 pinch salt
- 1 egg
- 1 tablespoon water
- 1 recipe pastry for a 9-inch double crust pie
- 2 tablespoons coarse granulated sugar, or as needed
- 1/2 cup dark chocolate chips

Preheat your oven to a high temperature of 400 degrees Fahrenheit (200 degrees Celsius).

Prepare the baking sheet by covering it with a layer of parchment paper to prevent sticking.

Combine the chopped apple, pear, brown sugar, vanilla extract, cornstarch, cinnamon, nutmeg, and cloves in a bowl. Mix everything together until well incorporated.

In another bowl, whisk the egg and water mixture until smooth. Set aside for later use.

Roll out the pastry dough on a lightly floured surface, and cut it into circular shapes using a 3- to 4-inch round cookie cutter.

Spoon a small amount of the apple mixture onto the center of each pastry circle. Fold the dough in half and press the edges firmly together to seal, making sure there are no gaps. Use a fork to crimp the edges if desired.

Place the hand pies on the prepared baking sheet, leaving enough space between each pie for even cooking.

Using a sharp knife, make 3 small slits in the top of each hand pie. Brush the surface of the pies with the egg mixture, and sprinkle with decorating sugar.

Bake the hand pies in the preheated oven until they are lightly golden brown, approximately 25 minutes. Allow them to cool completely on a wire rack or plate, about 20 minutes.

Melt the chocolate chips in short intervals of 15 seconds using a microwave-safe glass or ceramic bowl, stirring after each melting cycle. This should take around 1 to 2 minutes. Drizzle the melted chocolate over the cooled hand pies.
