Autumn Dessert Patties
Ingredients
  • 3 yellow potatoes, peeled and grated
  • 1 large carrot, peeled and grated
  • 1 parsnip, peeled and grated
  • 1 1/2 cups grated butternut squash
  • 1 egg
  • 1/2 cup whole wheat flour
  • 1 tablespoon ground cinnamon
Instructions
1
Preheat your oven to the desired temperature of 400 degrees Fahrenheit or 200 degrees Celsius.
2
Next, take a baking sheet and spray it with cooking spray to prevent sticking.
3
Then, combine the potatoes, carrot, parsnip, and squash in a large bowl and mix them thoroughly until they are evenly distributed.
4
To release the natural juices from the vegetables, tilt the bowl away from you and use your hands to gently squeeze them. Transfer the vegetables to a separate bowl and add the cinnamon, mixing well.
5
Allow the mixture to sit for 5 minutes.
6
Slowly pour out the excess liquid from the first bowl, leaving a thin layer of starch at the bottom.
7
Mix the starch with an egg and flour in a bowl, using a fork to combine them.
8
Take the starch mixture in your hands and work it through the shredded vegetables, ensuring they are well-coated.
9
Divide the mixture into small balls and flatten them slightly onto the prepared baking sheet.
10
Place the patties in the oven and bake until they are lightly browned around the edges, taking about 20 minutes.
11
Flip the patties over and continue baking until they are golden brown, requiring an additional 5 minutes.
