- 1/2 cup water
- 1/2 cup sour cream, or as desired
- 1/2 cup shredded Cheddar cheese, or as desired

Heat a substantial pan over a moderately high heat source; melt the butter within it until it reaches its liquid state, 3 to 5 minutes. Combine and stir the onions along with jalapeño peppers in the melted butter until they become tender and pliable. Introduce Mexican-style tomatoes into the onion mixture, then add rice, a pinch of salt, and a few grinds of black pepper. Add just the right amount of water to cover the rice.

Transfer the rice mixture to a boiling point, then lower the heat, cover it, and let it simmer until the rice is fully cooked, 40 to 45 minutes. Top with a dollop of sour cream and a sprinkle of Cheddar cheese before serving.
