Ingredients
- 2 russet potatoes, peeled and cut into 1-inch cubes
- 2 cups olive oil
- 1 tablespoon salt
- 3 tablespoons olive oil
- 1 onion, diced
- 1 teaspoon salt
- 1 clove garlic, finely chopped
- 1 red chile, minced
- 1/2 teaspoon smoked paprika
- 1 (14 ounce) can whole peeled tomatoes, drained
- 1/4 cup mayonnaise

Combine diced potatoes, 2 cups of high-quality olive oil, and a generous amount of salt in a large, refrigerated skillet.

Heat the mixture on a low setting and cook until the potatoes have become tender, taking around 12 to 15 minutes.

Increase the heat to a high level and fry the potatoes until they turn golden brown, requiring about 5 to 6 minutes.

Remove excess oil by draining the potatoes on paper towels.

Heat 3 tablespoons of olive oil in a large, heat-conductive saucepan over medium heat.

Cook and stir the onion with 1 teaspoon of salt in the hot oil until it becomes soft and fragrant, taking around 3 to 4 minutes.
