Authentic Pad Thai Noodles
Ingredients
  • 3/4 pound bean sprouts
  • 6 ounces pad thai rice noodles
  • 4 eggs
  • salt
  • 3 tablespoons lime juice
  • 3 tablespoons ketchup
  • 1 tablespoon brown sugar
  • 1/4 cup fish sauce
  • 3 tablespoons peanut oil
  • 1 tablespoon minced garlic
  • 1 1/2 teaspoons red pepper flakes
  • 2 cups grated carrots
  • 2/3 cup chopped peanuts
  • 1 cup green onions cut into 1-inch pieces

Heat a large container of water to its boiling point. Briefly submerge bean sprouts in the scorching liquid for about 30 seconds, then lift them out with a strainer and thoroughly rinse under running water. When the water reaches its boiling point again, introduce rice noodles into the pot and cook until they're tender but still retain some firmness, usually within 3 to 5 minutes. Drain and rinse the noodles under icy water.

In a small dish, whisk eggs together; add a dash of salt. In another bowl, mix lime juice, ketchup, brown sugar, and fish sauce until well combined. Heat oil in a wok or large skillet over medium-high heat. Add minced garlic and sauté for just a few seconds. Add pepper flakes and carrots; cook for 1 minute then remove from the wok. Pour beaten eggs into the wok and gently stir-fry until they're set. Then, add carrots, sauce, bean sprouts, noodles, peanuts, and green onions; toss everything together.
