Ingredients
- 1/2 cup white sugar
- 1/2 cup distilled white vinegar
- 1/4 cup soy sauce
- 2 tablespoons tamarind pulp
- 1 (12 ounce) package dried rice noodles
- 1/2 cup vegetable oil
- 1 1/2 teaspoons minced garlic
- 4 eggs
- 1 (12 ounce) package firm tofu, cut into 1/2 inch strips
- 1 1/2 tablespoons white sugar
- 1 1/2 teaspoons salt
- 1 1/2 cups ground peanuts
- 1 1/2 teaspoons ground, dried oriental radish
- 1/2 cup chopped fresh chives
- 1 tablespoon paprika
- 2 cups fresh bean sprouts
- 1 lime, cut into wedges
Instructions
1
To create a pad thai sauce, combine sugar, vinegar, soy sauce, and tamarind pulp in a medium-sized cooking vessel over a moderate flame.
2
To prepare the pad thai dish, immerse rice noodles in chilled water until they become pliable; discard excess water. In a large cooking vessel or wok, heat oil over a moderate flame and introduce garlic and eggs; mix until the eggs are fully incorporated. Add tofu and stir until it is well combined with the other ingredients; add noodles and continue stirring until they are cooked through.
3
Introduce the pad thai sauce, 1 1/2 tablespoons sugar, and 1 1/2 teaspoons salt into the mixture; blend until well combined. Add peanuts and ground radish, stirring until they are fully incorporated into the dish; remove from heat.
4
Add chives and paprika to the saucepan, stirring until they are evenly distributed throughout the dish.
5
Serve the pad thai hot, accompanied by a squeeze of lime and a side of bean sprouts.
