- 3 tablespoons dry potato flakes
- 2 tablespoons caraway seeds
- 1 1/2 tablespoons demerara sugar
- 2 1/2 teaspoons instant yeast
- 1 1/2 teaspoons sea salt
- 1 cup warm water
- 1/4 cup canola oil
- 1/4 cup sour pickle juice

Collect all necessary ingredients and place them in the bowl of your large stand mixer fitted with a paddle attachment. Begin by thoroughly mixing together the bread flour, rye flour, potato flakes, caraway seeds, demerara sugar, yeast, and sea salt.

Combine warm water, canola oil, and pickle juice in the mixer bowl with dry ingredients and mix until well combined.

Switch to the dough hook attachment on your stand mixer and continue mixing until your dough is rough, shaggy-looking, and slightly uneven in texture. Cover the bowl with plastic wrap and allow it to rest for 30 minutes, giving the ingredients time to meld together.

After resting, remove the plastic wrap and use the dough hook attachment to knead the dough until it becomes smooth, firm, and only slightly sticky. This process should take around 6 to 8 minutes.

Transfer the dough onto a lightly floured work surface and continue kneading until it is smooth and even. This final kneading session should take about 1 to 2 minutes.

Shape the dough into a ball and lightly oil a large bowl. Place the dough in the bowl, turning it to coat evenly with oil. Cover the bowl with plastic wrap and place it in a warm location, allowing it to rise until nearly double its original size. This should take around 1 hour.

Preheat your oven to 350 degrees F (175 degrees C) by placing the rack in the middle. Grease a 5x9-inch loaf pan and shape the dough into a log, placing it in the prepared loaf pan. Cover the pan with a cloth kitchen towel and allow it to rise until the top of the dough has risen slightly above the pan's edges. This should take 60 to 90 minutes.

Bake your loaf in the preheated oven until it is golden brown and cooked through, approximately 35 minutes. Check for doneness by inserting a thermometer into the center of the loaf; it should read 190 degrees F (90 degrees C). If your loaf browns too quickly, cover it loosely with aluminum foil, shiny side out.
