- 1/2 cup reduced-sodium soy sauce
- 1/2 cup white sugar
- 2 tablespoons honey
- 2 tablespoons minced garlic
- 2 tablespoons ground black pepper
- 3 tablespoons water
- 1 tablespoon Asian (toasted) sesame oil
- 1 1/2 tablespoons Asian plum wine

Clean and prepare the ribs by removing any loose bone fragments, allowing them to release excess moisture for 30 minutes before proceeding.

Combine the soy sauce, sugar, honey, garlic, black pepper, water, sesame oil, and plum wine in a bowl, whisking the mixture until the sugar has fully dissolved. Pour this marinade into a 1-gallon plastic bag, then add the ribs and remove as much air as possible. Seal the bag and refrigerate for at least 24 hours.

The following day, take the ribs out of the refrigerator and let them sit at room temperature for a short period before grilling. Remove the ribs from the marinade and discard the used liquid.

Heat up an outdoor grill to medium-high temperatures, lightly brushing the grill grates with oil. Grill the ribs until they are nicely browned on both sides and no longer pink in the center, taking 4-6 minutes to cook each side.
