In a large, heavy pot with a lid, combine the pork shoulder, bay leaf, red pepper, and water. Place the pot over high heat and bring the mixture to a rolling boil.

Once boiling, reduce the heat to low and let the pot simmer, covered, for 4 to 5 hours or until the meat is tenderly fall-apart.

Allow the pork shoulder to cool completely in its own juices, then remove any excess fat from the broth.

Shred or chop the tender meat into bite-sized pieces.

To make the braising liquid, pour off 3 cups of the juices from the pot and place them in a saucepan.

Bring the reserved liquid to a boil over high heat, then combine it with vinegar, sugar, ketchup, Worcestershire sauce, and minced garlic.
