- 6 bay leaves

Begin by submerging Anaheim and guajillo peppers in a saucepan, covering them with water. Bring the mixture to a rolling boil before gradually decreasing the heat to a low-medium temperature, allowing it to simmer for approximately 15 minutes. Set the saucepan aside to cool for a brief period of 5 minutes.

Next, transfer the chiles and water from the saucepan into a high-powered blender. Add a finely chopped onion, along with your preferred blend of spices and a pinch of salt. Blend the mixture until it reaches a smooth consistency.

Now, place stew meat in a large cooking vessel. Stir in the blended chile mixture you created earlier and add a few bay leaves to the pot. Cook over low-medium heat, allowing the meat to become extremely tender, which should take around 3 to 5 hours.
