Ingredients
- 2 pounds ground beef
- 2 1/2 cups crushed butter-flavored crackers
- 3/4 cup ketchup
- 1 small onion, chopped
- 1/4 cup brown sugar
- 2 eggs
- 2 slices bacon
- 2 tablespoons vinegar
- 2 tablespoons prepared yellow mustard
- 3/4 teaspoon salt, or to taste
Instructions
1
Preheat your oven to the desired temperature, which is 350 degrees Fahrenheit or 175 degrees Celsius.
2
In a large mixing bowl, combine ground beef, crushed crackers, three-quarters of a cup of ketchup, one-quarter cup of brown sugar, and beaten eggs until they are thoroughly incorporated.
3
Press the mixture into a 9x5-inch loaf pan, and place slices of bacon on top.
4
Place the loaf in the preheated oven and bake until it is fully cooked, approximately one hour.
5
While the meatloaf is baking, prepare a glaze by whisking together the remaining one cup of ketchup, half a cup of brown sugar, vinegar, mustard, and salt in a separate bowl.
6
Spread the glaze over the top of the meatloaf during its final 15 minutes of baking, resulting in a deliciously glazed finish.
