Ingredients
- 1/2 cup flour
- 1/3 cup yellow cornmeal
- 2 teaspoons salt
- 1 teaspoon baking powder
- 5 cups peeled and shredded potatoes
- 1/3 cup vegetable oil
- 2 eggs
- 1 onion, minced
- 1/4 cup vegetable oil

Combine dry ingredients, including flour, cornmeal, salt and baking powder, in a substantial bowl. Introduce diced potatoes, 1/3 cup of oil, eggs and chopped onion into the mixture, stirring until everything is harmoniously combined.

Heat 1/4 cup of oil in a large skillet over medium-high heat. Using a spoon, drop rounded tablespoons of the potato mixture into the hot oil, slightly flattening them. Cook until they develop a golden brown base before flipping and cooking the other side. Meanwhile, keep the remaining portions warm in a preheated oven while frying the rest.
