Authentic American Gyros with Lamb and Beef
Ingredients
  • 1 pound ground lamb
  • 1 pound ground beef
  • 1/2 cup finely diced yellow onion
  • 4 cloves garlic, crushed
  • 1 tablespoon minced fresh rosemary
  • 2 teaspoons dried oregano
  • 2 teaspoons kosher salt, or to taste
  • 1 teaspoon fresh ground black pepper
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/8 teaspoon ground cinnamon
  • 1/8 teaspoon cayenne pepper
  • 2 tablespoons dry bread crumbs
  • 1 tablespoon olive oil

Begin by preheating your oven to a high temperature of 350 degrees Fahrenheit, or the equivalent of 175 degrees Celsius. Next, lightly grease a 9x13-inch baking dish with oil to prevent sticking.

To prepare the dish, line it with parchment paper that extends above the edges for easy removal. Flip the parchment paper over so that the side coated with oil faces upwards.

In a large mixing bowl, combine ground lamb and beef. Add chopped onions, minced garlic, dried rosemary, oregano, salt, pepper, cumin, paprika, cinnamon, and a pinch of heat from the cayenne pepper. Mix everything together until it's well combined.

Transfer the meat mixture to your prepared baking dish and press it firmly into the dish in an even layer that reaches all the way to the edges. The mixture should be tightly packed and fairly dense.

Place the dish in your preheated oven and bake until it's nicely browned, taking around 40 to 45 minutes. Use an instant-read thermometer to check the internal temperature of the meat, which should be at least 160 degrees Fahrenheit, or 70 degrees Celsius.

Once the dish is done, let it cool to room temperature. Transfer the meat mixture to a plate and cover it with plastic wrap. Refrigerate for 1 to 2 hours, or until chilled.

Transfer the meat mixture to a cutting board and cut it into three equal pieces, cutting across the width. Slice each piece into thin strips, about 1/8 inch thick.

Heat some oil in a skillet over medium-high heat. Cook the slices until they're browned, taking about 2 minutes per side.
