Austrian Schnitzel
Ingredients
  • 1 quart oil for deep frying
  • 6 (6 ounce) fillets pork sirloin
  • 1 cup cake flour
  • 2 cups dry bread crumbs
  • 2 eggs
  • 1/4 cup milk
  • salt and pepper to taste

Preheat the deep-fryer to 350 degrees F (175 degrees C). Position the meat on a stable, flat surface and use a mallet to flatten it to an even thickness of 1/8 to 1/4 inch.

Prepare two shallow dishes, one for the flour and another for the bread crumbs. Crack eggs into a third dish and whisk them together with milk, adding a pinch of salt and pepper to taste.

Dip the meat into the flour, gently pressing it onto the surface with your fingers to coat evenly. Using a fork to hold the meat in place, dip it into the egg mixture and allow any excess to drip off. Finally, coat the meat with the bread crumbs by pressing them firmly onto the surface.

Once all the meat pieces have been prepared, carefully place them in the hot cooking oil and fry until they turn a golden brown color.
