Ingredients
- 1 cup quick cooking oats
- 1 cup white sugar
- 1 cup all-purpose flour
- 3/4 cup flaked coconut
- 1/2 cup butter
- 1 tablespoon golden syrup
- 2 tablespoons boiling water
- 1 teaspoon baking soda
Instructions
1
Preheat your oven to the desired temperature of 350 degrees Fahrenheit or 175 degrees Celsius.
2
Prepare a baking surface by either greasing it with cooking spray or lining it with parchment paper.
3
Mix together rolled oats, granulated sugar, all-purpose flour, and shredded coconut in a large mixing container.
4
Set the oat mixture aside for now.
5
In a small saucepan, gently heat together unsalted butter and golden syrup over low heat.
6
In another small bowl, combine boiling water with baking soda, then slowly add the mixture to the melted butter.
7
Pour the wet ingredients over the oat mixture and mix until a uniform consistency is achieved.
8
Drop spoonfuls of the dough onto the prepared baking surface, leaving about 2 inches of space between each cookie.
9
Place the cookies in a preheated oven and bake until the edges are golden brown, taking about 18 to 20 minutes.
10
Allow the cookies to cool on the baking sheet for a short while before transferring them to a wire rack to continue cooling completely.
