Ingredients
- 3/4 cup rolled oats
- 3/4 cup sweetened flaked coconut
- 1/2 cup all-purpose flour
- 1/2 cup white sugar
- 1/2 teaspoon baking powder
- 2 tablespoons boiling water
- 1/2 cup butter, melted
- 1 tablespoon golden syrup
Instructions
1
Preheat your oven to its highest temperature setting, which should be 350 degrees Fahrenheit or 175 degrees Celsius.
2
Next, take a moment to prepare your baking sheet by applying a thin layer of grease or cooking spray. This will ensure that the cookies release easily once they're baked.
3
Meanwhile, in a separate bowl, combine rolled oats, shredded coconut, all-purpose flour, and granulated sugar.
4
In another bowl, whisk together boiling water and baking powder until the powder is fully dissolved. Then, add in softened butter and golden syrup, stirring until well combined.
5
Gradually incorporate the wet ingredients into the dry ingredients, mixing until a smooth dough forms.
6
Scoop out small portions of the dough, roughly 1 tablespoon each, and space them about 2 inches apart on your prepared baking sheets.
7
Using a fork that's been lightly dusted with flour, gently press each dough portion into a flat shape.
8
Place the baking sheets in your preheated oven and bake until the edges are golden brown, approximately 15 minutes.
