  • 1 1/4 cups brown sugar
  • 1 cup buttermilk
  • 1/2 cup vegetable oil
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups diced rhubarb
  • 1/2 cup chopped walnuts
  • 1/3 cup white sugar
  • 1 tablespoon melted butter
  • 1 teaspoon ground cinnamon

Heat your oven to the desired temperature of three hundred fifty degrees Fahrenheit or one seventy-five degrees Celsius.

Prepare your baking vessels by either coating them with non-stick spray or placing paper liners inside the two twelve-cup muffin pans.

Combine dry ingredients, including flour, baking soda, baking powder, and salt, in a medium-sized bowl.
