Traditional Swedish Waffles (Aunt Gun-Marie's Recipe)
Ingredients
  • 1 1/2 cups all-purpose flour
  • 2 tablespoons white sugar
  • 1 tablespoon baking powder
  • 1 pinch fine salt
  • 2 eggs, separated
  • 1/2 teaspoon vanilla extract
  • 1 1/4 cups whole milk
  • 6 tablespoons melted butter
Instructions
1
Combine dry ingredients, including flour, sugar, baking powder, and salt, in a large bowl. Whisk together egg yolks and vanilla extract until well combined, then add them to the dry ingredients. Gradually incorporate milk into the mixture in three to four stages, stirring until a smooth batter forms.
2
In a separate bowl, use an electric mixer to whip egg whites until they become light and fluffy, forming soft peaks. Hold the beater or whisk vertically: the egg whites will form soft mounds. Gently merge the egg whites with the batter, taking care not to deflate it. Allow the mixture to rest for 10 to 15 minutes.
3
Preheat a waffle iron according to its manufacturer's guidelines.
4
Pour the batter into the preheated waffle iron and cook according to its manufacturer's instructions.
