Atlantic-Canada Goulash
Ingredients
  • 3 cups uncooked elbow macaroni
  • 1 tablespoon olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 small green bell pepper, finely chopped
  • 1 (12 ounce) can corned beef
  • 1 (10.75 ounce) can condensed tomato soup
  • 1/3 cup ketchup
  • salt and ground black pepper to taste
  • 1 cup freshly shredded Parmesan cheese
Instructions
1
Boil a large container filled with salted water in a high-heat setting until the liquid reaches its boiling point. Introduce macaroni into the pot and resume boiling, stirring occasionally until the pasta reaches its desired level of doneness - slightly resistant to pressure but fully cooked, approximately 8 minutes. Dispose of excess water by pouring it into a colander placed in the sink.
2
Heat olive oil within a large cooking vessel over an intermediate heat level, and cook onions alongside garlic until the onions become tender, roughly 5 minutes; introduce a green pepper into the pot and continue cooking until it is soft to the touch, approximately 8 additional minutes. Crush corned beef into the pot and allow it to warm up until hot, stirring occasionally.
3
Combine cooked macaroni with a mixture of tomato soup, ketchup, salt, and black pepper in the pot. Stir until well combined and bring the mixture to a gentle simmer over low heat, allowing flavors to meld together. Sprinkle grated Parmesan cheese on top and serve the dish hot.
