Combine the rice vinegar, red wine vinegar, soy sauce, sugar, and mustard in a bowl. Stir until the ingredients are well incorporated and the mixture is smooth. Gradually add the peanut oil and sesame oil to the bowl while stirring rapidly, ensuring a thorough emulsification. Set the dressing aside.

Next, fill a large pot with salted water and bring it to a rolling boil. Carefully add the asparagus to the boiling water, cooking for 3-5 minutes or until it reaches your desired level of tenderness. It should still retain some firmness, but be cooked through. Remove the asparagus from the water with a slotted spoon and immediately submerge it in an ice bath to halt any further cooking.
