- 1 pound fresh asparagus, trimmed and cut into 1/2 inch pieces
- 10 slices bacon
- 2 (8 inch) unbaked pie shells
- 1 egg white, lightly beaten
- 2 cups shredded Swiss cheese
- 4 large eggs
- 1 1/2 cups half-and-half cream
- 1/4 teaspoon ground nutmeg
- salt and pepper to taste

First, preheat your oven to a high temperature of 400 degrees Fahrenheit or 200 degrees Celsius.

Next, position the asparagus in a steamer basket over 1 inch of boiling water and cover it. Allow it to cook until it reaches a tender yet still crisp state, typically within 2 to 6 minutes. Remove the asparagus from the steamer and let it cool down.

Then, cook the bacon in a large skillet over medium-high heat, stirring occasionally until it is evenly browned. This process should take around 10 minutes. Remove the cooked bacon slices from the skillet and place them on paper towels to drain excess moisture.

After that, lightly coat the pie shells with a beaten egg white. Fill the pie shells with a mixture of crumbled bacon and steamed asparagus, followed by a sprinkle of Swiss cheese.

Now, mix eggs, half-and-half, nutmeg, salt, and pepper in a bowl until they are well combined. Pour the egg mixture over the cheese filling.

Finally, bake the pie in the preheated oven without covering it until the filling is set and solidified, which should take 35 to 40 minutes. Once done, let the pie cool down to room temperature before serving.
