Ingredients
- 1 tablespoon butter
- 1/2 pound fresh asparagus, trimmed and cut into 1 inch pieces
- 3 tablespoons olive oil
- 1/2 pound fresh mushrooms, sliced
- 6 eggs
- 1 tablespoon water
- 1 teaspoon chopped fresh thyme
- 1/2 cup shredded mozzarella cheese
- 3 tablespoons freshly grated Parmesan cheese

Heat your oven to 325 degrees Fahrenheit (165 degrees Celsius).

Melt butter in a suitable oven-safe pan over medium heat. Combine asparagus and olive oil; cook until they are tender, approximately 10 minutes. Add mushrooms to the mixture; continue cooking for about 5 minutes.

Mix eggs, water, and thyme in a medium-sized bowl; pour the mixture into the pan. Lower the heat to low; cover and cook for 5 minutes.

Transfer the pan to your preheated oven; bake until the eggs are no longer liquid, 10 to 15 minutes. Place mozzarella cheese and Parmesan cheese on top of the frittata; use your broiler to melt and lightly brown the cheeses.
