Ingredients
- 3 cups water
- 1 1/2 cups quick-cooking brown rice
- 2 tablespoons peanut oil
- 1 small yellow onion, chopped
- 1 small green bell pepper, chopped
- 1 teaspoon minced garlic
- 1/4 teaspoon red pepper flakes
- 3 green onions, thinly sliced
- 3 tablespoons soy sauce
- 1 cup frozen petite peas
- 2 teaspoons sesame oil
- 1/4 cup roasted peanuts
Instructions
1
Boil water in a saucepan until it reaches a rolling boil. Combine the rice with the boiling water and stir gently to distribute evenly. Lower the heat, cover the saucepan, and let it cook until all the liquid has been absorbed, approximately 20 minutes.
2
Set the cooked rice aside for later use.
3
Heat a generous amount of peanut oil in a large skillet or wok over medium heat. Introduce sliced onions, diced bell pepper, minced garlic, and a pinch of red pepper flakes into the skillet. Cook, stirring occasionally, for 3 minutes to allow the vegetables to soften slightly.
4
Boost the heat to medium-high and then stir in the cooked rice, chopped green onions, and a dash of soy sauce; cook and stir for 1 minute to allow the flavors to meld together.
5
Add frozen peas and cook for an additional minute more, allowing them to thaw slightly.
6
Remove the skillet from the heat source. Stir in a drizzle of sesame oil and garnish with peanuts to add a crunchy texture and nutty flavor.
