  • 1/2 cup minced cilantro
  • 1/2 cup dry bread crumbs
  • 1 egg, lightly beaten
  • 2 scallions, minced
  • 1 tablespoon vegetable oil
  • 1 tablespoon sesame oil
  • 2 tablespoons soy sauce
  • 2 slices fresh ginger, or more to taste
  • 1/4 cup brown sugar
  • 1/4 cup soy sauce
  • 1 tablespoon rice vinegar

Preheat your oven to the highest temperature, 400 degrees F (200 degrees C). To prevent sticking, cover a baking sheet with a non-stick layer of parchment paper.

Create the meatballs by blending turkey, cilantro, bread crumbs, egg, scallions, vegetable oil, sesame oil, and soy sauce in a spacious bowl. Mix the ingredients with your hands until they are fully incorporated. Use your palms to shape tablespoon-sized portions into perfectly rounded meatballs. Arrange the meatballs on the prepared baking sheet.

Place the meatballs in the preheated oven and let them cook until they are nicely browned, 20 to 25 minutes. Check the internal temperature of the meatballs using an instant-read thermometer; they should reach a minimum of 165 degrees F (74 degrees C).

While the meatballs are cooking, prepare the dipping sauce by crushing ginger with a firm press of your knife and placing it into a small pot. Add brown sugar, soy sauce, and rice vinegar to the pot. Heat the mixture over medium-low heat, stirring constantly, until the sugar dissolves and forms a smooth consistency, about 3 minutes. Continue to simmer, stirring frequently, until the sauce thickens slightly, another 3 minutes. Remove the ginger and pour the sauce into individual cups for serving.
