Asian-Style Fried Chicken
Ingredients
  • 3 cups plain yogurt
  • 1 whole chicken, cut into 8 pieces
  • 3 1/2 cups whole milk
  • 4 eggs
  • 5 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon cracked black pepper
  • 3/4 teaspoon curry powder
  • 1/4 teaspoon paprika
  • 3 cups peanut oil for frying, or as needed
Instructions
1
Place a generous amount of yogurt into a spacious, resealable plastic container. Combine the chicken with the yogurt, ensuring it's evenly coated. Remove any excess air from the bag by squeezing it firmly and seal the container securely.
2
Allow the chicken to marinate in the refrigerator for an extended period, typically ranging from 8 hours to overnight.
3
Once the chicken has finished marinating, remove it from the yogurt and discard the remaining yogurt. Rinse any excess yogurt from the chicken pieces, then gently pat them dry with a paper towel to remove any remaining moisture.
4
In a separate bowl, whisk together milk and eggs until they form a smooth, uniform mixture. In another wide, shallow bowl, combine flour, salt, pepper, curry powder, and paprika to create a well-mixed blend.
5
Dip each chicken piece into the milk-egg mixture, coating it thoroughly. Immediately transfer the coated chicken to a plate and continue preparing the remaining pieces.
6
Heat oil in a deep-fryer or a large saucepan to 375 degrees F (190 degrees C). To prevent overcrowding, cook the chicken pieces in batches as needed.
7
Carefully place the coated chicken pieces into the hot oil, cooking until they reach an internal temperature of 165 degrees F (74 degrees C), indicated by an instant-read thermometer inserted into the thickest part of the thigh, near the bone.
