- 1/2 cup arugula leaves, or more to taste
- 1/3 cup olive oil
- 1/3 cup raw almonds
- 4 cloves garlic
- salt to taste

Begin by filling a large container with water, adding a moderate amount of salt to the water.

Bring the water to a rolling boil and then carefully add a handful of arugula to the boiling water.

Allow the arugula to cook for approximately 30 seconds, or until it has reached a vibrant green color.

Immediately transfer the cooked arugula to a bowl filled with ice-cold water, allowing it to rapidly chill and lose its heat.

Once the arugula has cooled, carefully lift it out of the ice water and drain off any excess moisture.

Next, combine the cooled arugula, a generous amount of olive oil, some chopped almonds, and minced garlic in a blender.

Blend the ingredients together until they form a rough, chunky mixture, stopping to scrape down the sides of the blender as needed.
