Arroz con Pollo (Authentic Peruvian Style)
Ingredients
  • 1 tablespoon vegetable oil
  • 5 skinless chicken pieces
  • salt and ground black pepper to taste
  • 1 large onion, cut into small cubes
  • 2 cloves garlic, minced
  • 1 cup chopped fresh cilantro
  • 3 cups white rice
  • 2 cups water
  • 1 (12 fluid ounce) can beer
  • 1 carrot, cut into small cubes
  • 1 cup green peas

Heat a generous amount of vegetable oil in a substantial cooking vessel with a lid over medium heat. Prepare the chicken by sprinkling it with salt and pepper; cook in the hot oil until just browned, about 2 minutes per side. Transfer the chicken to a serving platter, retaining the flavorful oil in the pot.

Sauté sliced onions and minced garlic in the retained oil until the onions become translucent, taking around 5 minutes. Introduce chopped cilantro into the onion mixture; season with salt and pepper to taste. Cook and stir the mixture for an additional 2 minutes.

Return the chicken to the pot; add a serving of rice, water, beer, grated carrot, and frozen peas. Cover the pot with a lid, reduce the heat to low, and let it simmer until the rice absorbs the liquid completely and is tender, approximately 20 minutes.
