- 1/2 cup white sugar
- 1 egg
- 1/2 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1/2 cup arrowroot flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt

Preheat your oven to 350 degrees Fahrenheit (or 175 degrees Celsius, if you prefer). To prevent the baked goods from sticking, lightly coat your baking sheets with non-stick spray or line them with parchment paper.

Mix the butter and sugar together until they form a smooth, creamy consistency. Next, incorporate an egg into the mixture, followed by a hint of vanilla for added flavor.

In a separate bowl, whisk together the flour, arrowroot powder, baking powder, and salt. Then, gradually add this dry mixture to the butter-sugar-egg-vanilla combination and blend until everything is well combined.

Divide the dough into two equal parts. On a lightly dusted surface, roll out one half of the dough to a thickness of about 1/8 inch. Use a cookie cutter or the rim of a glass to cut out rounds, approximately 2 1/2 inches in diameter. Place these rounds onto the prepared baking sheet and gently prick them with a fork to prevent bubbling. Repeat this process with the remaining dough.

Place the baking sheet in your preheated oven and bake until the edges are golden brown, taking about 8 to 10 minutes. If you prefer a slightly more baked texture, allow the goods an additional minute or two.
