Ingredients
- 3 pounds Yukon Gold potatoes, peeled, quartered, and sliced into 1/4-inch pieces
- 1 tablespoon kosher salt, or more to taste
- 1 tablespoon dried mint, divided
- 1/2 cup mild olive oil, divided
- 1 large red onion, diced
- 1/2 cup diced red bell pepper
- 2 cloves garlic, minced
- 1/3 cup lemon juice, or more to taste
- 1/2 cup thinly sliced green onions
- 1/4 cup chopped fresh mint
- 2 tablespoons chopped fresh Italian parsley
- 1/4 teaspoon freshly ground black pepper
- 1/4 teaspoon Aleppo chili flakes
- 1 pinch cayenne pepper

Gather all necessary ingredients and prepare them for use.

Place sliced potatoes in a large container with enough cold water to cover the potatoes by about two inches. Add 1 rounded tablespoon of kosher salt and 2 ½ teaspoons of dried mint to the water. Bring the mixture to a boil over high heat, then reduce the temperature to medium and let it cook until the potatoes are tender, approximately 15 minutes. Check on the potatoes every 5 to 6 minutes to ensure they are cooked through.

Once the potatoes have finished cooking, transfer them to a large mixing bowl and allow them to cool slightly.

Meanwhile, heat ¼ cup of olive oil in a skillet over medium-high heat. Add sliced red onion, diced red bell pepper, minced garlic, and a pinch of salt to the skillet. Cook and stir for just 1 minute, then turn off the heat.

Stir in the remaining dried mint into the skillet mixture.

Drizzle freshly squeezed lemon juice over the cooled potatoes and gently toss them with a spatula to combine. Add chopped green onions, the red onion mixture, remaining olive oil, fresh mint, fresh parsley, salt to taste, black pepper, chili flakes, and cayenne. Mix the ingredients together with a spatula until well combined.

Cover the bowl with plastic wrap and refrigerate the salad for at least 3 to 4 hours, allowing the flavors to meld together.

Before serving, unwrap the salad and stir it gently. Taste and adjust the seasonings as needed to suit your personal preferences, adding more salt if required.
