Ingredients
- 3 tablespoons olive oil
- 6 green onions, chopped
- 1 (16 ounce) package frozen peas
- 1 cup crushed tomatoes
- 1 potato, peeled and cut into wedges
- 1/2 cup chopped fresh dill
- salt and ground black pepper to taste
- 1/2 cup water, or as needed
Instructions
1
Preheat a saucepan over medium heat, warming it up with olive oil.
2
Once the oil is hot, add sliced onions and sauté them until they become translucent and tender, but not caramelized. This should take around 5 minutes of constant stirring.
3
Next, add a medley of frozen peas, diced tomatoes, cubed potatoes, chopped fresh dill, and a pinch of salt to taste. If the mixture seems too dry, add some water from a tap or a bottle to compensate for the liquid content of the tomatoes.
4
Stir everything together thoroughly, making sure all the ingredients are well combined.
5
Bring the mixture to a rolling boil, then reduce the heat and let it simmer with the lid partially on top until both the peas and potatoes are tender, approximately 30 minutes.
6
Before serving, ensure that any remaining moisture from the tomatoes has evaporated, leaving you with a deliciously cooked vegetable stew.
