Ingredients
- 1/2 cup margarine
- 3 tablespoons margarine
- 2 tablespoons golden syrup
- 2 teaspoons boiling water
- 1 teaspoon baking soda
- 2 cups rolled oats
- 1 cup all-purpose flour
- 3/4 cup raw sugar
- 1/2 cup dried shredded coconut
- 1/2 cup diced dried apricots

Preheat the oven to its highest temperature setting, which is 350 degrees F (or equivalently, 175 degrees C).

Next, take a baking sheet and give it a light coating of non-stick cooking spray to prevent the cookies from sticking.

Melt 1/2 cup plus 3 tablespoons of margarine in a microwave-safe bowl using short bursts until it reaches the desired consistency. This should take around 30 seconds to 1 minute.

In a separate, small bowl, whisk together boiling water and baking soda until the baking soda is fully incorporated.

Add this mixture to the melted margarine and stir until well combined.

Then, in a large bowl, combine rolled oats, all-purpose flour, granulated sugar, shredded coconut, and dried apricots.

Gradually add in water and the margarine mixture, stirring until a dough forms.

Shape the dough into small balls and gently flatten them slightly on the prepared baking sheet.

Finally, place these cookie dough balls onto the preheated baking sheet and bake in the oven until they are golden brown, approximately 15 minutes.
