  • 1 teaspoon lemon zest

  • 3/4 cup butter
  • 3 tablespoons buttermilk
  • 10 egg yolks
  • 2/3 cup white sugar
  • 2/3 cup cornstarch
  • 1 quart milk
  • 3 sprigs basil
  • 1/2 teaspoon vanilla extract
  • 15 fresh apricots, pitted and sliced
  • 1 cup apricot jam

Preheat the oven to 350 degrees Fahrenheit (175 degrees Celsius).

Combine all-purpose flour, whole wheat flour, almond meal, 1 tablespoon sugar, lemon zest, and salt in a large bowl. Utilize a pastry blender to incorporate butter into the mixture until it reaches pea-sized crumbles. Mix in buttermilk until the dough comes together seamlessly.

Press the dough evenly across the bottom and 1/2 inch up the sides of a 12x16-inch tart pan or sheet pan.

Bake in the preheated oven until it reaches a lightly browned state, approximately 20 minutes. Allow the pan to cool completely on a wire rack, taking around 1 hour.

In a separate bowl, whisk together egg yolks, 2/3 cup sugar, and cornstarch. Whisk in milk to create a smooth mixture. Add whole basil sprigs for added flavor.

Cook the milk mixture over medium heat, whisking constantly until it begins to steam, approximately 8 minutes. Reduce the heat to low and remove the basil sprigs with tongs.

Set a wire mesh strainer over a large bowl and pour the custard into it. Use a rubber spatula to press it through the strainer, allowing the mixture to pass into the bowl. Whisk vanilla extract into the custard and press a piece of plastic wrap onto its surface.
