Ingredients
- 1 1/4 cups all-purpose flour
- 1 cup whole wheat flour
- 1 cup almond meal
- 1 tablespoon white sugar
- 1 teaspoon lemon zest
- 1/2 teaspoon salt
- 3/4 cup butter
- 3 tablespoons buttermilk
- 10 egg yolks
- 2/3 cup white sugar
- 2/3 cup cornstarch
- 1 quart milk
- 3 sprigs basil
- 1/2 teaspoon vanilla extract
- 15 fresh apricots, pitted and sliced
- 1 cup apricot jam
Instructions
1
Preheat the oven to 350 degrees Fahrenheit (175 degrees Celsius).
2
Combine all-purpose flour, whole wheat flour, almond meal, 1 tablespoon sugar, lemon zest, and salt in a large bowl. Utilize a pastry blender to incorporate butter into the mixture until it reaches pea-sized crumbles. Mix in buttermilk until the dough comes together seamlessly.
3
Press the dough evenly across the bottom and 1/2 inch up the sides of a 12x16-inch tart pan or sheet pan.
4
Bake in the preheated oven until it reaches a lightly browned state, approximately 20 minutes. Allow the pan to cool completely on a wire rack, taking around 1 hour.
5
In a separate bowl, whisk together egg yolks, 2/3 cup sugar, and cornstarch. Whisk in milk to create a smooth mixture. Add whole basil sprigs for added flavor.
6
Cook the milk mixture over medium heat, whisking constantly until it begins to steam, approximately 8 minutes. Reduce the heat to low and remove the basil sprigs with tongs.
7
Whisk vigorously until the custard thickens, about 1 minute.
8
Set a wire mesh strainer over a large bowl and pour the custard into it. Use a rubber spatula to press it through the strainer, allowing the mixture to pass into the bowl. Whisk vanilla extract into the custard and press a piece of plastic wrap onto its surface.
9
Refrigerate the custard until it reaches a cold state, approximately 3 hours.
10
Pour the cooled custard over the crust and spread it evenly to the edges using a rubber spatula. Arrange apricot slices on top of the custard.
11
Scoop apricot jam into a small microwave-safe bowl and microwave it on high until melted, approximately 1 minute. Brush the jam over the apricot slices using a spatula.
