Ingredients
- 3/4 cup unsweetened applesauce
- 1/3 cup packed brown sugar
- 1/3 cup honey
- 1/2 cup whole wheat flour
- 1/2 cup all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/2 cup rolled oats
- 1 teaspoon vanilla extract
- 1 teaspoon almond extract
- 1/2 cup chopped dried apricots
- 1/4 cup sliced almonds
- 1/4 cup dried cranberries
Instructions
1
Preheat the oven to its highest temperature setting, which is 350 degrees Fahrenheit or 175 degrees Celsius.
2
Next, lightly coat a baking sheet with a thin layer of cooking spray or oil to prevent the muffins from sticking.
3
In a large mixing container, combine the applesauce, brown sugar, and honey in a smooth and consistent mixture.
4
In another mixing container, whisk together the whole wheat flour, all-purpose flour, baking soda, baking powder, salt, cinnamon, and nutmeg until well combined.
5
Mix the dry ingredients into the applesauce mixture until a uniform blend is achieved.
6
Add the oats, vanilla extract, almond extract, dried apricots, sliced almonds, and cranberries to the mixture and gently fold them in.
7
Spoon rounded teaspoonfuls of the batter onto the prepared baking sheet, leaving enough space between each muffin for even cooking.
8
Place the baking sheet in the preheated oven and bake for 12 to 15 minutes, or until the muffins are golden brown.
9
Once done, remove the baking sheet from the oven and let the muffins cool on wire racks.
