Ingredients
- 2 quarts oil for frying
- 2 1/4 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon nutmeg
- 1/4 teaspoon ground cloves
- 1/4 teaspoon salt
- 1/2 cup white sugar
- 1/4 cup firmly packed light brown sugar
- 2 large eggs
- 2 tablespoons vegetable oil
- 1/4 cup milk
- 1 cup unsweetened applesauce
- 1/2 teaspoon vanilla extract

Preheat the deep-fryer to a scorching hot temperature of 375 degrees Fahrenheit or 190 degrees Celsius.

Combine the flour, baking powder, baking soda, cinnamon, nutmeg, cloves, and salt in a bowl, and gently pour them onto a sheet of waxed paper to allow for easy sifting.

In a large mixing vessel, use an electric mixer on medium speed to cream together the sugar, brown sugar, and eggs until they become light and airy. Gradually add 2 tablespoons of oil to the mixture, blending until smooth.

Gradually incorporate the flour mixture into the egg mixture, alternating with milk and beginning and ending with the dry ingredients until a perfect blend is achieved. Stir in 1/4 cup of applesauce and add a hint of vanilla to the mixture.

Using a spoon or small scoop, carefully drop 3-4 portions of batter into the hot oil at one time, leaving enough space between each piece to prevent overcrowding. Fry for 3 minutes or until the treats turn a golden brown color, then use tongs to gently flip them over. Remove the fried goodies from the oil with tongs and place them on paper towels to drain excess oil. Allow the treats to cool completely before indulging in them.
